Vada Pav is a famous road food from Mumbai, India. It comprises of a broiled potato waste (vada) sandwiched between two cuts of bread (pav), presented with different chutneys and flavors. Here is a finished recipe to make Vada Pav at home:
Fixings:
For the Vada:
- 4-5 medium-sized potatoes, bubbled and pounded
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red bean stew powder
- 1 tsp garam masala powder
- Salt to taste
- A modest bunch of curry leaves
- 2 green chillies, slashed
- 1 inch ginger, ground
- Oil for profound searing
- For the Pav:
- 8 pav buns
- 2 tbsp margarine
- Garlic chutney or red bean stew powder to taste
- Tamarind chutney or date chutney to taste
- Coriander leaves, cleaved
Guidelines:
- Heat oil in a container and add mustard seeds, cumin seeds, curry leaves, green chillies and ground ginger. Saute briefly.
- Add turmeric powder, red bean stew powder, garam masala powder and salt. Blend well.
- Gather pureed potatoes and blend everything into a single unit. Cook for 2-3 minutes, blending periodically. Eliminate from intensity and let it cool.
- Take a little piece of the potato combination and shape it into a ball. Smooth it somewhat to make a patty. Rehash with the leftover combination.
- Heat oil in a profound griddle. When the oil is hot, add the potato patties and sear till brilliant brown. Channel on a paper towel.
- Slice the pav buns down the middle evenly. Spread margarine within every half.
- Sprinkle garlic chutney or red bean stew powder on one side of the pav bun and tamarind chutney or date chutney on the opposite side.
- Place a hot in the middle between the pav buns. Embellish with cleaved coriander leaves.
- Serve hot with additional chutneys and a cup of hot chai.
